Mango passionfruit Mojito

Ingredients

12 tbsp White rum (flavored is fine)

1 Mango (Cut into small chunks)

4 passion fruits (Cut in half)

4 Limes (3/4 juiced, wedge saved)

4 tsp sugar (Use sugar substitute if desired)

8 stalks Mint

1 Litre bottle Soda or tonic water

Instructions

Pick 8-10 mint leaves off one stalk, crush and squeeze in hand, releasing mint oil. Add to a container with lime juice of 3/4 lime, and muddle.
add 2 tbsp of mango pieces, along with passion fruit juice and seeds. Muddle until slightly smooth.

Add mixture, 1 tsp of sugar (or sugar substitute), and 3 tbsp of rum into a mixing canister (we use a coffee on-the-go canister), and shake well. *Since we couldn't get our hands on any Konyagi, we used Malibu (coconut flavoured) rum. If you want to go virgin, forgo the rum, and add a bit more juice of choice.

Fill glass with ice cubes. Pour mixture into glass, and top off with tonic water and stir. Garnish with a mint leaf stalk, lime, and mango. *We used Schweppes Elderflower flavour tonic water, although any kind or flavour can be used. Now go sip away!
